Une autre influence encore plus sensible pour Brillat-Savarin est celle de Maine de Biran, surtout de sa conception du moral de l’homme : la jonction du physiologique et du psychologique qui préfigure l’inconscient freudien.\nL’originalité de Brillat-Savarin consiste à lier cette «science de l’homme» à la gastronomie qui subsume non seulement toutes les autres sciences, mais tous les produits de la civilisation. C’est ce qu’il désigne par le néologisme « anthroponomie ».
